Ingredients**
- 75g cooked Loprofin Rice
- 2 spring onions
- 1 small carrot
- 6 grapes
- 2 mushrooms
- 25g red pepper
- 25g apple chips
- 1 tablespoon of apple juice
- 2 tablespoons of olive oil
- Salt and pepper
Method
- Chop the pepper, mushrooms, carrot, grapes and spring onions into bite-size pieces
- In a bowl, add the apple juice and whisk in the olive oil, seasoning with salt and pepper to taste
- Then add the chopped vegetables and the cooked Loprofin Rice to the bowl
- Stir until everything is coated in the dressing, then add the apple chips
- Serve straight away or leave in the fridge until needed

- You can keep this rice salad in the fridge for 3 days
- You can add any fruits or vegetables to this salad to suit your own taste
- Great for lunch boxes, buffets, and party’s
- You can also add low protein cheese to this salad (smoked cheddar is really nice in this salad)
