Ingredients
35g of brussel sprouts
1 small carrot
4 spring onions
5 cherry tomatoes
50g low protein yoghurt
1 tbsps Sno-Pro
Seasoning
Fresh chopped parsley
Method
- Slice the sprouts thinly with a sharp knife, then, chop the spring onions and half the tomatoes and add to a bowl.
- Grate the carrot into the bowl and season with salt and pepper and chopped parsley.
- In a bowl, mix the low protein yoghurt and Sno-Pro to form a dressing, then pour over the vegetables and toss through. Serve or keep in the fridge until needed.
Chef's Tip: This salad is great for lunchboxes, snacking on, or served as a side dish - you can add any vegetables you like, fresh salad leaves, or spinach works in the salad too.
