Ingredients

280g plain flour, plus extra for dusting
50g cocoa powder
2 tsp bicarbonate of soda
2 x 200mls bottles of Fortini Smoothie Multi Fibre
50g chocolate chips
50g dried fruit
50g caster sugar
2 tbsp lemon juice

Method

  1.  In a bowl sieve the flour, cocoa powder, bicarbonate of soda and sugar.
  2. Add the chocolate chips and dried fruit. Stir to combine.
  3. Add the Fortini Smoothie Multi Fibre and lemon juice. Stir with a wooden spoon until the mixture comes together.
  4. Turn the mixture out onto a floured worksurface and shape into an 8-inch circle using the sides of your hands. Tip: the dough will be sticky so flour your hands if needed.
  5. Place onto a lined baking sheet and bake at 180°C for 35-45 minutes. Once baked allow to cool on the baking sheet.
  6. Once cooled slice and serve. Store any leftovers in a tin or plastic wrap.

Chef's tips:

  • The bread can be frozen for up to 3 months once cooled.
  • Use any dried fruits like sour cherries and cranberries, pineapple and mango or mixed dried fruit.
  • Serve with a layer of cream cheese and chopped fresh fruit.
  • Or toast the bread and serve with butter or chocolate spread.
