Ingredients**

  • 100g cooled sticky Loprofin Rice
  • 50g cucumber 
  • 2 spring onions  
  • ½ red pepper 
  • 1 tablespoon mayonnaise  
  • salt & pepper 
  • 2 sheets of nori (seaweed sheets) 

Method

  1. Slice the cucumber, pepper, and spring onion 
  2. In a bowl, mix the cooled sticky Loprofin Rice with the mayonnaise 
  3. Place 1 sheet of the nori on a board and spread over half the rice
  4. Along one edge of the nori sheet, place strips of the vegetables and season to taste 
  5. Roll up the sushi, like a swiss roll, and cut it into slices
  6. Repeat with the other sheet of nori, Loprofin Rice, and vegetables 
  7. You can wrap in a plastic wrap and chill until needed

Chef tips

  • You can add any vegetables to this sushi just don’t over-fill the sushi roll
  • Lettuce, tomatoes, carrot, and spinach work well 
  • Serve with pickled ginger, wasabi, and soya sauce
