Ingredients**
- 100g cooled sticky Loprofin Rice
- 50g cucumber
- 2 spring onions
- ½ red pepper
- 1 tablespoon mayonnaise
- salt & pepper
- 2 sheets of nori (seaweed sheets)
Method
- Slice the cucumber, pepper, and spring onion
- In a bowl, mix the cooled sticky Loprofin Rice with the mayonnaise
- Place 1 sheet of the nori on a board and spread over half the rice
- Along one edge of the nori sheet, place strips of the vegetables and season to taste
- Roll up the sushi, like a swiss roll, and cut it into slices
- Repeat with the other sheet of nori, Loprofin Rice, and vegetables
- You can wrap in a plastic wrap and chill until needed
Chef tips
- You can add any vegetables to this sushi just don’t over-fill the sushi roll
- Lettuce, tomatoes, carrot, and spinach work well
- Serve with pickled ginger, wasabi, and soya sauce
